Ever since kava roastery was opened we steered away from blends. We wanted our customers to try single origin coffees and taste the difference in terroirs, varietals and preparation processes. 

When it comes to blending coffees we realized it’s not as easy as it seems. Beans should be complementary in flavours and consistent in density as they will end up in a grinder and we want it to be as consistent as possible. After a long testing and experimenting we opted out for three coffees in different ratios.

For this one we choose Brazil for body, Ethiopia for smoothness and Colombia for the fruity kick in the finish. Samba and Halo Beriti are familiar to you as you can find them in our portfolio, but this special Colombia won’t be featured individually. Just like in the wine industry this coffee was fermented using inoculated yeast. To clarify this we’ll pull this parallel with wine. 

Wine fermentation inoculated with different yeast is the process of adding a selected, cultured yeast strain to grape juice (must) to begin the conversion of sugar into alcohol and carbon dioxide, resulting in a predictable and controlled fermentation. This contrasts with spontaneous fermentation which relies on wild yeasts naturally present on the grapes. Inoculation ensures a rapid start, prevents undesirable wild yeast activity, and allows winemakers to select yeast strains that impart specific characteristics and ensure higher alcohol tolerance and reliable sugar conversion. 

Same goes with coffee. Most coffees are fermented spontaneously with naturally present yeast. This colombia was fermented using inoculated yeast from mango and pineapple which, combined with immaculate picking, selection and processing produced coffee with exceptional flavour and complexity. 

This coffee was aimed to be an espresso workhorse and we wouldn’t have it as filter although some will find it great for this method as well. It’s smooth and creamy texture gives out a great milk combo with notes of mango, vanilla, pineapple and pina colada.
