Our last offer from El Diviso farm was a natural Sidra which was later on used by Anthony Douglas for winning the World Barista Championship. This time we’re introducing a washed coffee that showcases precise processing and the Bourbon Sidra variety.

Finca El Diviso is located at an altitude of aprox. 1850 meters above sea level and is owned by his wife Oliva Ramirez and their 3 sons, William, Sergio and Dario live and work on the farm. With a lot of effort and hard work, they own round about 12.000 coffee trees and the picking of the cherries is done all by the family, depulping is done on a daily basis during the harvesting months.

Bourbon Sidra is a unique and relatively rare coffee variety. It is the result of a controlled crossbreed between Bourbon and SL28. Bourbon Sidra coffee is prized for its complex and unique flavor profile. It is often described as having notes of tropical fruits, lavender, rose, jasmine and a bright acidity. It is elegant and silky. The combination of Bourbon’s sweetness and Sidra’s distinct attributes contributes to its unique flavor profile.

This lot was fermented without water for 24 hours, then washed with clean water and sun dried.

The result is an amazingly complex and effervescent cup, full of fresh fruit and herbal notes.
