Cáscara in Spanish means the skin of a fruit, in this case the coffee fruit. During coffee processing - in particular washed and honey process - the skin would be used as a disposal to be turned into compost, but in this case the skin is processed into the cleanest cáscara you could find and taste.
Why is this cáscara different from the rest? The producer Ricardo Pérez, with the help of the University of Costa Rica, developed an entire facility at his farm to process specifically food-grade quality cáscara.
From his farm where organic farming practices are being performed, the cherries are picked and brought to the small processing plant, where they are being washed, depulped, pasteurized and dehydrated in a sterile environment. The result is not only the cleanest cáscara on the market, but also an exceptionally tasty one.
Beautifully preserved, the hot brew of Helsar’s cáscara is golden colored with flavour notes of hibiscus, rooibos tea and a tart acidity.
Hot brewing suggestion:
In a pot or jug with a handle, add 10g of cascara
Add 180g of filtered water between 92-96 degrees
Let it steep for 4 minutes
Strain, pour and enjoy!
Cold brewing suggestion:
In a pot or carafe, add 30g of cascara
Add 450g of water at room temperature
Let steep in the refrigerator for 12-16 hours
Strain, pour and enjoy!
