As a very active farmer with big aspirations, Walter Paredes is fully committed to producing specialty coffee. By implementing proper farm management practices, he pays extra attention to protecting coffee trees from excessive rainfall and plagues. 

Coffees are harvested between July and September. They are processed as washed, and fermented for 36 hours. Drying takes 8 - 12 days, and then the coffee is stored in Grainpro bags in a fresh and clean room.

The profile of Walters coffees is generally creamy with a honeyed acidity, and has syrupy, pollen-like flavours.
