Colombia | El Suspiro



Ricardo Silva's farm lies in Algeciras, halfway between Neiva city and Gigante and is situated high up at 1900 meters. This particular Pink Bourbon lot is first prefermented in cherry for 36 hours, then depulped and wet fermented for a further 48 hours. The coffee is then washed and dried under covered drying beds for 20 days.
